What Purpose Does BHT Serve in Nature?
BHT is a phenolic compound, a molecule consisting of a phenyl group (−C6H5) bonded to a hydroxyl group (−OH). Phenols are produced by plant. As these same phenolic compounds are present in food consumed in human diets and in plants.

Several other research groups have reported a linear correlation between phenolic content and antioxidant activity, but most natural antioxidative compounds often work synergistically with each other to produce a broad spectrum of antioxidative activities that create an effective defense system against free radical attack.
